Food : Homemade Marshmallows | Be The Hit This Holiday Season With Made from Scratch Marshmallows

Longtime since I've posted on here ; sharing a DIY or recipe. As of late I've been doing all my posts on Instagram so if you aren't following me over there go check out what I've been up to.

With that being said I really want to get back to posting on here more often, It's a lot easier sharing my posts with a blog link than it is an Instagram post. So if you like these recipe posts and things keep an eye out over here.

Want to be the hit of your holiday party or the favorite at your family Christmas?
 Bring homemade marshmallows to the party. They are actually rather easy to make just take make sure to be careful, you are working with boiling sugar. Some people won't even realize you can make these from scratch so good chance they will think you are a baking genius. 








Ingredients:

1 Cup Water
2 Tablespoons , plus 1 1/2 Teaspoons Powdered Unflavored Gelatin 
1 1/2 Cups Granulated Sugar
1/4 Teaspoon Salt
1 Cup Light Corn Syrup 
1 Tablespoon Vanilla Extract 
1/2 Cup Powdered Sugar 



Lightly grease a 8x9 pan with vegetable oil or cooking spray and dust with powder sugar.

In a mixing bowl add  1/2 cup water (add water first) & powdered gelatin and allow for it to bloom.

In a sauce pan add your candy thermometer; sugar, salt, 1/2 cup water & corn syrup. Mix together using a metal spoon. 
Cook on medium/high heat until your candy thermometer reaches 240 degrees Fahrenheit. Make sure to stir mixture and not to burn your sugar.

Once sugar mixture has reached 240 degrees pour into your mixing bowl and or stand mixer with bloomed gelatin; add vanilla extract and whisk on low for 5 mins or so. Slowly increase speed once mixture starts to thicken. I keep mine low in the beginning because I don't want the hot liquid flying out of my bowl.

Mix on medium/high until your marshmallow begins to form thick white peaks. This does take a little time so don't get discouraged if you've been mixing for 5 minutes and not much has happened yet.

Once the peaks have formed pour into greased pan. Take a spatula to scrap out bowl and even out marshmallow. Let them set up and cool off for about 30-45 minutes before sprinkling the top with powdered sugar. After completely cooled cut with sharp knife and enjoy.

Tip!
If you cut and place in container or stack on platter sprinkle all sides with powdered sugar. This helps them to not stick together.

Recipe : Homemade Biscuits | Layers Of Butter & Flakey Crumbs

Hello :)


One of my favorite things in life is a biscuit. You can do anything with them; Make a sandwich out of them , pour gravy on top, or eat them like almost eating dessert by drizzling some honey on them. In any form they are my favorite. 

Don't get me started on canned biscuits they taste nothing like a real homemade biscuit; full of a lovely little thing called butter. If your in a time pinch frozen are ok but they will never live up to the truly heavenly thing that is a homemade biscuit. 


To make these you don't need much skill or many ingredients. Just a little bit of time and a whole lot of butter. Once you've mastered the art of biscuit making you'll never want to go back to frozen or god forbid the awfulness that lay in a can. 




 











Recipe:  


4 cups self rising flour

1 tsp. Baking Soda

2 Tbsp. Baking Powder 

3 sticks salted butter ( 3/4 pound) cold & grated 

2 eggs

1 1/2 cups Milk (I used 2%)


Bake at 400 °F for 15-20 mins


In a mixing bowl measure out your dry ingredients. Then take your cold sticks of butter and grate it with a cheese grater.

Once you've done that add to your dry ingredients. I then cut in the butter using a pastry cutter. Can also use a wooden spoon or your hands. After your butter is mixed into your flour mixture add in two eggs. (Note) Crack eggs into a separate bowl and whisk together. Then add into your mixing bowl. Stir it into your flour & butter mixture using a spoon or if easier your hands. It's ok to get in there and work with your hands while cooking.

Now turn out your biscuit dough onto your cleaned & floured work surface. 

To make your biscuits extra flakey. Roll your dough out until about 1/2 inch thick cutting it in half with a knife. Stack on top of each other and then fold length wise on top of its self. This will help to create beautiful buttery layers.

Now roll out until roughly 1 inch thick and cut with biscuit cutter. My cutter is on the smaller side but you can use any size biscuit cutter. 

Place on baking sheet and bake for 15-20 minutes or until golden brown. My smaller biscuits baked for 15.

Let them cool off slightly and enjoy!

Food | Recipe : Chocolate Chip Cookie Cake Balls

Chocolate chip cookies & cake; what can be better than those two combinations ? Today I am sharing a delicious cake ball recipe with you. Its super easy and if your a baker you'll have most the ingredients in your pantry.
 
 
 


Recipe: makes 3 dozen


Cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
8 tablespoons unsalted butter
1 3/4 cups sugar
2 eggs
2 1/4 teaspoons vanilla extract
1 1/4 cups milk

Frosting:
8 tablespoons unsalted butter
4 cups confectioners sugar
1-2 teaspoons milk
1 teaspoon vanilla extract
1/8 teaspoon salt

1/2 cup semi sweet chocolate chips

Chocolate Coating:
24oz. Almond bark bar

2-3 Chopped Chocolate Chip Cookies

In a large bowl or stand mixer combine butter, eggs and sugar. Add in your salt, baking powder. Mix. Once that's all combined add milk and vanilla. Slowly start mixing in the flour.
Grease a 9 x 12 cake pan and bake at 350 for around 25 minutes.

Once the cake has baked and cooled completely. Break apart cake into a large bowl, make the cake pieces into small crumbs. Then add in your chocolate chips.

Make the frosting:

Cream butter , vanilla & salt. Start adding in your confectioners sugar. Once you've added in all the sugar pour in your milk. You don't want the frosting to thick so add your milk until its a nice frosting consistency.

DO NOTE! The frosting recipe does make a little more frosting than you'll need. Unless you want your cake mixture very moist.

Combine your cake crumbs and frosting. Its easiest to mix by using your hands. Once thoroughly combined roll into 1 1/2 - 2 inch balls.

Melt your almond bark and roll balls in the coating with a fork or spoon. Then sprinkle the tops with crushed chocolate chip cookie crumbs.

Recipe | Chunky Peanut Butter Cup Cookies

Aww peanut butter! How I love thee. Even since I was a little girl I've loved peanut butter flavored anything. I'll even just scoop a spoonful of peanut butter out of the jar and eat it. Which has freaked some people out in the past saying its like "eating a stick of butter or cup of ketchup." which I personally don't think at all. Call me crazy!
 
So these cookies below are a spin on my Great Aunt Edna's classic peanut butter cookie.
All I did was swapped out creamy peanut butter for chunky and added peanut butter cups & milk chocolate chips.
You could make these minus the chocolate and they'd be delicious too.
 

 







Recipe:  Bake 350F Time 11 mins

1 cup Brown Sugar
1 cup White Sugar
1 cup Un-salted Butter
1 cup Chunky Peanut Butter
1 tsp. Vanilla
2 Eggs
3 cup Flour
2 tsp. Baking Soda
8 oz. Bag Mini Peanut Butter Cups
1/2 cup Milk Chocolate Chips
 
 
In a large bowl or stand mixer add eggs and brown & white sugar. Cream the butter and sugar then add in baking soda & vanilla. Mix thoroughly. Then start adding in your flour a little bit at a time. Once you've mixed in all of your flour add peanut butter cups & chocolate chips.
 
 
Scoop cookies onto a baking sheet roughly 1- 2 inch balls (depending how large a cookie you want.)  not packing the to tight and then smash them down. Bake at 350F for 11 mins.

Thirsty Thursday: The Perfect Margarita Recipe

So I've not posted in a very long time. I really need to get back on track with a schedule. Since I've been away so long lots of things have happened in my life. Some great and some not so great. But recently something great happened, I've finally perfected the best margarita. I've been trying to make them at home for awhile now and they just never taste like I want them to. But now I've figured it out. Yay me!
 
 
Cinco de mayo is fast approaching so it's the perfect time to share this with you all.


 
 
 
Recipe:
 
 
1/2 - 1 cup Water
1/2 cup Arta Silver Tequila
6-7 limes
1/3 cup Cointreau
2-3 tablespoons Blue Agave Golden Syrup
 
Optional: Kosher salt for glass rims
 
 
In a blender squeeze fresh limes (The more the better, I personally like lots of fresh lime) and add water. Add your tequila and Cointreau. Then add the agave. Blend until combined.
 
Rim margarita glass or mason jar with salt and pour over ice. And enjoy!

Cocktails: Limeaide Margaritas | Happy Cinco de Mayo

Hello!
 
Happy Cinco de Mayo! Maybe you're Mexican , Mexican - American or happen to know someone born of the 5th of May ( Happy Birthday Dad!) then maybe you'll be celebrating the occasion with some Tacos & Tequila.
 
So in celebration of Cinco de Mayo and my Dad's birthday I thought I'd share my go to recipe for Margaritas. They are very simple and a crowd pleaser.
 
 
 


    
Recipe:

Makes 4

Ingredients |

1 Cup Tequila (I use Hornitos)
1/4 Cup Triple Sec
1/2 Can Frozen Limeaide Concentrate
1/2 Cup Water
Ice Cubes
Fresh Lime
Salt

Throw ingredients into  a blender & blend. If you are wanting them a little less strong you can always add less Tequila. Fresh lime wedge & salt to garnish glass. The amount of ice you want depends on how frozen you're wanting your Margarita. Around 1 cup I recommend.

Recipe: Pumpkin Bread | Perfect For Thanksgiving Morning

Hello! Lovelies
 
Cinnamon, Cloves & Nutmeg the taste of fall In my opinion. Warm spices taste best in the cold months. And those three spice pair even better with Pumpkin. These days "Pumpkin Spice" is everywhere. From coffee shops, to candy bars and even pizza.
Okay, that last one was a joke I had seen online. ;)
 
But anyways it's everywhere. Personally I like to stick to using those flavors in baking. And my latest obsession is my Great Grandmothers Pumpkin Bread recipe. It's a amazing! It tastes even better than homemade Pumpkin Pie and let me tell ya I really like pie!
 
I slightly adjusted the recipe to work with what I keep on hand in my pantry. But it still keeps with the basics of the original recipe.


 
 
 
 
 
 
Recipe:  Bake 350F   Baked in 2.3 qt floral baker from the Pioneer Woman Collection for 1hr. 20mins, also made 6 Mini Bundt cakes those took 30 mins. Note: Depending on the size of pan and your oven I'd start checking at around 1 hour.
 
Pumpkin Bread
 
3 cups Raw Cane Sugar
1 cup Vegetable Oil
3 Eggs
29 oz. Canned Pumpkin Puree
4 cups All-Purpose Flour
1/2 teaspoon Salt
1 tablespoon Cloves
2 tablespoon Cinnamon
1 tablespoon Nutmeg
1 teaspoon Baking Soda
 
 
 
In a large bowl or stand mixer add eggs. Cracking one at a time. Then add in sugar and mix. Once combined add in your oil. And mix. Then you'll add the canned pumpkin. After you've combined that with the other ingredents add spices: cinnamon, clove & nutmeg. And baking powder and soda. Check to make sure all is mixed and add in 4 cups of flour, I recommend 2 or less at a time so you don't make a big mess.

Once all flour is mixed in grease pans with butter or cooking spray. And place in batter. Then place pans into a 350F pre-heated oven.

Food: Cinnamon & Brown Sugar Apple Muffins | Perfect Fall Muffins

To me Fall is golden leaves, cool breezy days and warms spices. I can't wait for it to be officially fall, and we are only a few more weeks away. Here in Colorado you are starting to see early signs of fall in the trees. I can't wait until Autumn is in full bloom. It's the best time of the year. With all that being said Fall has some of the best recipes and treats in my opinion. To me nothing beats fall baking. So since Apples are coming into all the markets & grocery shops I'd make some yummy Apple Muffins. These are a great breakfast along with being sweet treat!
 
If you aren't wanting to make muffins you could use this recipe and put them in mini loafs pans. And make Apple Bread.
 
 
 
 
 
Ingredients:   Pre-Heat Oven to 375 Âº F | Bake For 25 Minutes | Makes 2 1/2 Dozen
 
3 1/4 Cups All Purpose Flour
5 Teaspoons Baking Powder
3 Teaspoons Cinnamon
1 Teaspoon Salt
1/2 Teaspoon Ground Cloves
4 Eggs
1 Cup Milk
1 Cup Brown Sugar + 4 Tablespoons
1/2 Cup Vegetable or Canola Oil
2 Cups Chopped Honey Crisp Apples (Or your favorite Apples)
3 Grated Honey Crisp Apples
2 Tablespoons Lemon Juice
 
 
Topping:
1 Teaspoon Cinnamon
6 Tablespoons Brown Sugar
 
In a large mixing bowl or stand mixer add all your dry ingredients: Flour, Baking Powder, Cinnamon, brown sugar, salt, & cloves. Crack your eggs in separate bowl just in case they are bloody or bad. Then add them to your dry mix along with your milk and mix. Then add your lemon juice and oil. Once you've mixed all your ingredients add grated apples and mix. After mixed fold in your chopped apples.
 
 
Line your muffin tins with cases and fill just under full. Mix your topping ingredients in a small bowl and sprinkle on top of your muffins. Bake in oven at 375º F for 25 minutes.

Foodie Friday: Graze Box Review | Food Subscription Box

I've reviewed many different beauty boxes on this blog in the past. But recently I unsubscribed to my last one I was still receiving. I am sure I will go back to it eventually but I thought Id take a break for awhile.
 
But recently I was watching a video by MakeupByTiffanyD on YouTube and she was talking about a food subscription box called Graze that she receives. It has 4 little snacks in each box, unless you get the larger box which has 8. And all of them are on the healthier side. To be honest though when she said that I was wondering if they would really taste good or not. Because lets be real here not always do "healthy" snacks taste good, don't get me wrong I am not saying they can't, they just don't always do.
 
Anyways you could get your first box free so I thought why not try it. No harm in doing so. And well it came earlier this week.
 


 
 
 My box came with:
 
  • Chili Lime Nuts
 
  • Seaweed Rice Crackers
 
  • Caramel Apples
 
&
 
  • Summer Berry Flapjacks
 
 
 
 
 So far I've had the nuts and flapjacks. The Chili Lime flavor was so good. I wish I could go to the store and buy more. The first bite I had of the flapjacks I wasn't so sure about. I don't know what it was but I didn't think I liked them but then I took another bite and it was really good. I could totally eat them again. I'm not so sure about the other two but I will give them a go and see.
 
 
The 4 box selection is $6.99 and the 8 $11.99.  I think I will continue to buy the 4 for awhile and see how I like the service.
 
The thing I like about this box is that it's always little healthy-ish snacks and not just random junk like other food boxes I've seen before. Another nice thing about them is that they are small and pre packaged so if your late or in a hurry you can just pop one in your bag and go.

Foodie Friday: Pistachio Cupcakes with Vanilla Frosting

Lovelies
 
 
 
Ever since I ordered Pistachio flavoring I've been loving making different kinds of pistachio flavored sweet treats. Also recently I've been loving a good cupcake. So I thought "Why not mix the too".  So if you love a good cupcake and are a fan of Pistachio than this is a recipe for you.

Next I think I want to try and make some kind of Pistachio cookie, maybe a short bread. Something like that sounds really good. This week I thought i'd make some cupcakes and in my personal opinion they turned out AMAZING!

I made these cupcakes at the start of the week and they are long gone by now, PS I didn't eat them all myself.
As I am writing this blog post it is pouring rain which it has been for the past 14+ hours or so. And with it being a Friday and I might be having game night, I may just have to whip up another batch of these wonderful cupcakes.

Pre-Heat Oven 350F  Bake 20-25 Mintues  Makes 2 dozen
 
Cupcakes:
 
 
4 Eggs
1 Cup Milk
2 Sticks Unsalted Butter (Room temp)
2 Cups Organic Cane Sugar
1 1/2 Cups Self Rising Flour
1 1/4 Cups All purpose Flour
1 Teaspoon Vanilla
2 Tablespoons Pistachio Flavoring
4-5 drops Green Gel Food Coloring
 
In a stand mixer or bowl cream sugar and butter. Once creamed add in milk, vanilla and pistachio flavoring. Slowly add in your flour. Keep mixing until all the ingredents are combined.
 
Line muffin tins with Cupcake cases. Scoop batter into cases, fill just under full.
 
Frosting:
 
Your Favorite jar of premade Frosting
1/2 Cup Powdered Sugar
1 teaspoon Vanilla Extract
 
Optional:
 
Crushed Un-salted Pistachios
 
In a bowl scoop out your pre-made Vanilla or Buttercream frosting. Beat on high with mixer. Then turn down and slowly add in your powdered sugar. Once you've added in all your sugar turn mixer back up. And add in Vanilla. Once you've beat the frosting 4-5 minutes it should become light and fluffy.
 
Add into pastry bag a pipe onto Cupcakes once they've cooled. Sprinkle crushed Pistachios on top.
 
 
 
This recipe is easy to make and very tasty. You can always make a homemade frosting this way it just skips a step. Also you can just use the premade frosting as is. Whatever floats your boat! There are no rules when it comes to frosting cupcakes. Just eat & enjoy!

Foodie Friday: Rustic Birds Nest | A Haystack Inspired Recipe

Spring has sprung and I am very excited about it. Don't get me wrong I love Winter, being from Colorado you have to love Winter otherwise you wouldn't live here.
Since Spring arrived last week, you can hear the birds sing, the bees buzzing and the daffodils have bloomed. Spring is mother natures fresh start, It brings forth new life. Have I mentioned baby lambs and cows, how very cute they are this time of year.
 
So I thought I'd make up a sweet treat inspired by the changing season. This would make a great treat for your Easter dinner.
 
This recipe is inspired by the classic retro treat called Haystacks. That are either made with noodles or pretzels. You could always substitute the Choy mein for pretzels.
 
 
 
 
 
 


Makes: 1 dozen

1 1/3 Cups Butterscotch Chips (11 oz package)
4 Cups Mini Marshmallows
2 Tablespoon Butter
4 Cups La Choy Chow Mein Noodles (6oz package)


In a medium sized sauce pan melt 2 tablespoons butter. Once your butter has melted add in Butterscotch chips and mini marshmallows. Make sure your stove top isn't set to high, you don't want to burn your marshmallows. They can easily burn if you have the heat too high. Keep stirring until they've melted. Once they have both melted add in your chow mein noodles. Mix into your melted mixture.

Line cookie sheet with wax or parchment paper. Scoop on tray into little mounds and press in the center. Once you've scooped them all out press in the middle Chocolate eggs. That way they will set up with the nest and not fall out.

Caution: I recommend using spoons and not your hands to form them. You will end up burning your hands. They don't need to be perfect. No two birds nests are alike so there's no need to hurt yourself for the idea of "Perfection".

Let cool 1-2 hours before eating. You can speed up the cooling by placing them in fridge for 20-30 mins.

Recipe: Pistachio Nut Meringue Cookies | Saint Patricks Day Treat

With tomorrow being Saint Patrick's Day I thought I'd whip up a yummy little Green treat. I wouldn't really say that this is an "Irish" dessert but a fun one to make for St. Patrick's day none the less.

Pistachio in my opinion is one of the best dessert flavors. That is very under appreciated in the states. In my local grocery store you can't even buy Pistachio flavoring, I have to buy it online.

I've recently become a little obsessed with Meringues, They are a very fun and special little treat. They look very fancy but are rather easy to make. And you can make them in an endless variety of flavors.

 
 


Bake: 275°F for  40 minutes, Let cool in oven 1 hour Makes 26 cookies
 
 
4 Egg Whites (Room Temp)
 
1/4 teaspoon Salt
 
1/4 teaspoon Cream Of Tartar
 
1 1/4 cups Granulated Sugar
 
3 teaspoons Pistachio Flavoring
 
3-4 drops Green Gel Food coloring
 
10-15 Unsalted Pistachios Crushed
 
In a stand mixer. Add egg whites, salt, cream of tartar. Mix. Keep mixing for 2-3 minutes. First few minutes will look like you are mixing bubbles. Once soft peaks have slowly began to form start slowly adding in your sugar. Keep mixing and adding in your sugar. After you've added all your sugar continue to mix. Add in your favoring & gel color. Mix for another 2-5 minutes or until you see stiff peaks.
 
Line a cookie sheet with parchment paper. And scoop mixture onto tray with a spoon or cookie scoop. Sprinkle the top of the scooped Meringues with crushed Pistachios. Bake for 40 minutes on the middle rack (Not bottom). If placed on bottom rack the bottoms of the meringue will overcook
